I love wandering around small regional cities when visiting China, checking out the local markets & food sellers on my own. Great fun. The Wife stresses out over how far I wander, & getting lost. Hasn't happened yet :)

I'd be 95% sure it would be pork. Beef is expensive there, as it requires acreage, or importation. Pork can be intensively farmed, not much land required.
I've yet to taste any decent lamb there, it's expensive too.
